Glazed BBQ Chipotle Hot Dogs with Chimichurri

Ingredients

    Chimichurri:
  • 15 gparsley
  • 1 fresh red chilli, finely chopped
  • 1/2 shallot, very finely chopped
  • 1 tbspred wine vinegar
  • 1/2 tspdried oregano
  • 1 garlic clove, minced
  • 45 mlolive oil
  • BBQ chipotle glaze:
  • 1.5 tbspchipotle in adobo
  • 1 tbspketchup
  • 1 tbspagave
  • 1/2 tspsmoked paprika
  • 1 garlic clove, minced
  • 1/2 tspred wine vinegar
  • To assemble
  • 4 Like Hot Dogs
  • 2 ciabatta
  • 1 tbspvegan mayonnaise
  • 1 roasted red peppers, torn into strips
  • to serve rocket

Sticky chipotle glazed hot dogs with a bright chimichurri drizzle nestled in a crusty bun with a showering of some creamy vegan feta.


Method

  • Combine all the ingredients for the chimichurri in a bowl, season to taste and set to one side.
  • Fry the LIKE Hot Dogs for 8 minutes, turning once or twice to get an even golden brown colour on all sides
  • In the meantime, combine all the sauce ingredients in a bowl then add to the pan to caramelise the sauce and coat the hot dogs, reducing the heat slightly to avoid the sauce burning.
  • Grab some toasted ciabatta, brush on a touch of mayo, lay down some roasted red pepper, some rocket, the sausages (x2 per ciabatta) then top with the crumbled feta and chimichurri.
