M&M’S Millionaire Shortbread

Ingredients

    Shortbread
  • 175gunsalted butter, softened
  • 250gplain flour
  • 70gcaster sguar
  • 125gM&M'S Chocolate
  • Caramel
  • 100gunsalted butter
  • 100gbrown sugar
  • 397g cancondensed milk
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • Topping
  • 200gDark chocolate, melted
  • 125g M&M'S Chocolate

Surely this is the most decadent of all the biscuit-based deserts. Named after capitalists, smothered with chocolate with a hidden layer of velvety smooth caramel and mounted on a beautifully soft buttery biscuit base. We've topped our millionaire shortbread recipe with a sprinkle of M&Ms for a sugar-coated finish, find the recipe below.

Method

  • Preheat the oven to 180ºC. Grease and line an 8x8 inch square pan with parchment paper.
  • In a bowl, beat together the butter, flour, and sugar until combined. Then fold through the M&M’S Chocolate. Press this into the base of the tin. Prick with a fork and bake for 20 minutes until light golden brown
  • Meanwhile, in a pot add the butter, brown sugar, condensed milk, vanilla, and salt over medium heat. Stir continuously until the sugar is completely dissolved.
  • Bring the heat up to medium-high and bring to a boil for about 5-10 minutes again continuously stirring. The mixture should thicken quite well.
  • Pour this caramel mixture over the shortbread and cool completely to set.
  • Spread the melted chocolate over the set caramel and garnish with M&M’S Chocolate. Let set. Slice into bars and enjoy.
