Pickle Butter Reuben

You could serve this pickle butter with just about anything.

Ingredients

  • 150gsoftened salted butter
  • 4 or 5diced pickles
  • 3 tbspdiced dill
  • 1 baguette
  • around 200gsliced pastrami
  • around 200gswiss cheese
  • 1 tubsaurkraut
  • 100ml thousand island dressing

But we think serving it in a Reuben sandwich just makes SENSE, right? Something about this NYC Jewish deli classic is just calling out for an outrageous slathering of pickle butter.

Method

  • Mix the butter with the pickles and the diced dill. Season to taste.
  • Spread this liberally up the baguette and top with the sliced pastrami, sliced cheese, saurkraut and dressing.
  • Cut into sections and eat!
