Leftover Roasted Potato Salad

Your leftover roast potatoes all dressed up!

Ingredients

    all you'll need:
  • left over roasted potatoes
  • 1 tbspcrème fraîche
  • 1 tbspsour cream
  • 1lemon, zest and juice
  • 1green onion, finely chopped
  • 20gdill, finely chopped
  • 20gchives, finely chopped
  • 6 rashesstreaky bacon
  • 1 tbsp honey
  • salt and pepper, to taste

We know what you're thinking...who has leftover potatoes? But you might wanna knock up extra just so you can make this recipe. This is creamy, carby and oh so comforting - but less heavy than your roast.

Method

  • Place your streaky bacon on an oven rack, cover with your honey and bake in the oven until crispy - about 10 to 15 mins. Once cooked and cooled, place in a food processor and blitz until you reach a consistency you like!
  • Take your left over roasted potatoes and heat them up in the oven at 180°c for 10mins.
  • In a large bowl, add your crème fraîche, sour cream, lemon zest and juice, mix and season with salt and pepper to taste.
  • Add in all your finely chopped greens, bacon bits, and of course add your potatoes. Mix and plate up with more dill and chives. Enjoy!
