This clever hack transforms simple tater tots into a crunchy hash-brown style taco shell. Stack it up with breakfast favourites from salmon and avocado to eggs and bacon - or whatever else you fancy!
Cook the tater tots according to the packet instructions until golden and crispy.
Arrange the cooked tots in a tight cluster on a lined tray. Using something heavy (we used a taco press, but a panini press, small baking dish, or even the bottom of a saucepan works), firmly smash them into a single flat disc. If any loose bits escape, tuck them back in and press again until everything sticks together.
Once your tater tot “taco” is as flat and sturdy as possible, heat a teaspoon of oil in a pan over medium-high. Fry the tot disc for about a minute per side to re-crisp the edges and help it hold its shape.
Top your tater tot taco with your favourite breakfast toppings. We used herby cream cheese, smoked salmon, sliced avocado, and a crispy fried egg, finished with fresh herbs — but it’s a brilliant blank canvas for whatever you fancy!
