Crispy Parm Shell Greek Salad

These crispy pasta recipes have been doing the round and we're jumping on that bandwagon with these crispy parm covered pasta shells.

Serves 4-6

Ingredients

  • 500g, cooked pasta shells
  • 100ml olive oil
  • 50g parmesan
  • 1 tbsp sea salt
  • 4 large chopped tomatoes
  • 1 whole cucumber
  • 1 half pickled red onion
  • 1 jar black Greek olives
  • 200g feta
  • 50ml olive oil
  • 20ml red wine vinegar
  • 1 tbsp oregano

Ours are going with a simple Greek salad.

Method

  • Cook the pasta to packet instructions then rinse under the tap. Toss with the oil, parmesan and salt and air fry (in batches) for roughly 20 minutes until crispy.
  • Toss with the other ingredients, season to taste and eat!
