Mortadella Kebabs

These have been doing the rounds on the internet and to be honest it's an absolutely excellent idea.

Serves 4-6

Ingredients

  • around 200g worth mortadella
  • 50g pistachios
  • 100g basil
  • 40g parmesan, grated
  • 100ml olive oil
  • to taste flaked sea salt
  • 1 ball burrata
  • 4 brioche hot dog buns

And that's because the only thing more delicious than mortadella is crispy grilled mortadella with pistachio pesto in a little sandwich with burrata. Even writing that makes us hungry.

Method

  • Take some wooden skewers and soak them for at least 30 minutes. Fire up your grill.
  • Fold up the mortadella and skewer it onto the wooden skewers. Check the heat of the grill - you want it to be low and steady, lots of white coals. Grill the skewers until crispy and golden.
  • In a food processor, blitz the pistachios, basil and parmesan until grainy (don't over blitz) then pour in the oil. Check for seasoning - you may want to add more salt or pepper.
  • Tear the burrata open to reveal the strachiatella inside.
  • Toast the buns on the BBQ, load with burrata, grilled mortadella and a drizzle of pesto; finish with a dusting of parmesan.
