We're bring you this Hawaiian classic to brighten up your lunchtime! Slices of crispy fried squares of spam and sushi rice wrapped in nori served with a sticky dipping sauce.

Method

  • In a saucepan add sushi rice, water and rice vinegar and boil for around 10 to 15 mins, then remove from the heat and leave to rest for 10 with the lid on.
  • While the rice is resting place the spam in a bowl and pour over hot water, leaving it to soak for 10 mins, then take a sheet of nori and slice in half.
  • Slice the spam lengthways into rectangles and place one in the center of your Nori. Take some of your cooled sushi rice and press either side, molding with a knife to create 2 equal rectangles next to the spam.
  • Carefully continue making layers of spam and rice alternating placement to create a checkerboard pattern.
  • Wrap the nori around the sides also using the second half to completely cover the edges tightly. Carefully cut to create slices and fry in a pan until crispy on both sides.
  • For the sauce heat soy sauce, mirin and brown sugar in a pan until thickened.
  • Serve all together with a sprinkle of sesame seeds.
  • What do you think of the recipe?
