Pork & Prawn Udon Gyoza

Chewy udon noodles are combined with pork mince, prawns, aromatics, and cornflour to form super crispy pancakes.

Ingredients

  • 200graw prawns, chopped
  • 300gpork mince
  • 450gudon noodles
  • 2eggs
  • 30gcornflour
  • 1.5 tbspsoy sauce
  • Pinchsalt
  • Pinchwhite pepper
  • 2garlic cloves, grated
  • 1/2 inchginger
  • 3spring onions, sliced
  • 2 tbspchives, finely chopped
  • Vegetable oil
  • Chilli crisp, to serve
  • Black vinegar, to serve

This is basically your favourite dumpling, combined with your favourite noodle, but in crispy pancake form. Basically dumplings, but without the faff of pleating and folding!

Method

  • Start by roughly chopping up the udon.
  • Add to a bowl with all of the other ingredients, and mix well to combine
  • Chill for 10 minutes, covered, then shape into patties with oiled hands
  • Pan fry in a pan with a splash of vegetable oil over medium heat. Flip once nicely golden brown, and cook for a further few minutes until both sides are golden.
  • Serve with chilli oil and black vinegar, and dig in!
