The Juiciest Tomato and Tapenade Sandwich

Ingredients

    The tapenade:
  • 37ggreen olives
  • 50gkalamata olives
  • 1/2 tbspcapers
  • 1 tsplemon juice
  • 1-2 tbspextra virgin olive oil
  • 10gparsley
  • 1/2small garlic clove
  • 2-3 tbspvegan mayonnaise
  • Tomatoes:
  • 3large tomatoes (beef, heritage etc any colour)
  • to tasteflakey sea salt
  • To assemble:
  • 1-2ciabattas
  • a handfulfresh basil leaves
  • a drizzleextra virgin olive oil

If you're deeply obsessed with salty, umami things and you love tomatoes - this is for you. The tapenade is the perfect accompaniment to the tomatoes, seasoning them perfectly. It's simple but absolutely delicious. Make sure you try in the height of tomato season!

Method

  • Blend all the ingredients for the tapenade and season to taste. 2 tbsp of the tapenade with 2-3 tbsp vegan mayo.
  • Bake the ciabattas according to packet instructions.
  • Thickly slice the tomatoes and season generously with salt.
  • Assemble the sandwich by generously coating both sides of the bread with the tapenade mayo then load the tomatoes in, top with basil leaves and drizzle with extra virgin olive oil and plenty of cracked black pepper. Enjoy!
